Organic Saragolla Broken Mafaldine Dragonara are born from an ancient agricultural and artisanal tradition. They are produced exclusively with semolina from 100% organic Saragolla durum wheat grown on the company’s own lands by Dragonara using organic and symbiotic farming methods.

The pasta is worked slowly in the company’s artisanal pasta workshop with bronze dies and static low-temperature drying. For this reason it retains a rough surface, ideal for holding every sauce.

Broken mafaldine have an elegant and versatile shape. They are also perfect with hearty sauces, homemade passatas and vegetable creams.

Bronze-drawn and slow-dried

Dragonara Broken Mafaldine are bronze-drawn to obtain a porous and authentic texture. Afterwards the pasta is slowly dried in static dryers at controlled temperature.
