How to use Saragolla flour

Sargagolla wheat flour can be used for home doughs and artisanal recipes. It is suitable either on its own or blended with semolas or more elastic flours, depending on the desired result.

For bread and focaccia a slow fermentation is recommended to better enhance the aroma and flavor of the ancient wheat.
