Khorasan is an ancient wheat with large kernels and a full, gently aromatic flavour, suitable for genuine, artisanal preparations. Semolina is coarser in texture than flour and is particularly suitable for dense doughs and traditional recipes.

How to use Khorasan semolina

Khorasan semolina is suitable for fresh pasta, bread and focaccia. It can be used alone or blended with other flours depending on the desired texture.

For fresh pasta, work it with water until you obtain a firm dough, then let it rest before shaping.
